As you will be aware, 01 March is St David’s Day, Dydd Dewi Sant, patron saint of Wales. Wales’ national day and we don’t even get a public holiday (although Charlie boy is getting an additional one to have his crown fitted later in the year). This is what we call democracy.
This year’s Focaccia Dewi Sant took into account St David’s monasterial rules that his monks should not eat meat nor drink beer and should live on bread, herbs and salt.
So this simple focaccia used my 80% hydration dough with a mixture of dried herbs in the dough, and before baking was coated in a mix of fresh herbs (parsley, rosemary, basil, mint, thyme, sage, dill) in olive oil and a little finely chopped shallot + a sprinkling of salt.
Totally lovely and we abstained from beer but drank cider, gin and wine as a consolation …
