Sunday lunch. Pork Enchiladas, Guacamole, Rice, Frijoles Refritos, Quick Pickled Onions.
Even though the pork was left over from another meal and the beans had already been cooked, there’s a lot of work here. At 10.00 a.m. I was well into prepping. The phone rang and I ignored it. Getting on for 2.00 p.m. it rang again and Sue answered it. It was Rick. He said I thought you were probably getting lunch ready when I phoned earlier. I said I’m still prepping now. He said is this for your second lunch … ?
But, a lot of me went into this. I made the chicken stock that went into finishing the beans, the pork and cooking the rice. The enchilada sauce that went into the pork and onto the enchiladas. I made the vinegar that pickled the onions. The guacamole did not come out of a jar. And I made the tortillas.
What a smart arse.
