Weak excuses for a drink: Beautiful if freezing sunny day yesterday. Our good neighbour Steffi toiling away in her garden. Do you fancy a Mojito about 1.00p.m.? We’ve got too much mint.
So I’m prepping lunch for about 2.00p.m. We gather at 1.00p.m. as arranged and sip a leisurely 2oz cocktail. Anyone fancy another? I politely ask. Is pork chops greasy?
Sue and Steffi are enthusiastic, I wimpishly go onto white wine.
Finally three hours later than planned I present the most fabulous meal I’ve produced in a long time:
Chicken Fajitas with grilled peppers and spring onions, Rice a la Mexicana, Guacamole, Mushroom/Serrano Salsa with my famous wheat tortillas.
Sometimes there’s no point in being modest – it was bloody good.
