  1. Marcus, amazed by the oven-spring, got in touch to ask if it’s 100% wholemeal. Well, it’s 100% wholemeal but using a white starter. So in an 800g loaf (940g dough) there’s about 490g wholemeal and about 70g white flour in the starter.
