Finnish Pulla

pulla 008 smallSo Gert says, can you do me something Scandiwegian next week? Well actually he said Nordic but we’re not purists here. Gert, who is not lacking in imagination, is doing a Nordic St David’s Day menu. Oh no, I say, not Swedish Spiced Laputabrot again. It might be immensely popular but I have never understood why people like large quantities of golden syrup and sunflower oil flavoured with aniseed AND fennel unless they are crossing the Antarctic in winter. No, says Gert, something Nordic, sweet and cardamom flavoured.
Cardamom is not something I associate with Scandiwegia so I Google appropriate words and find Pulla posted by one Julie J on The Fresh Loaf, get out the tool box and give some serious welly to her Finnish Mother-in-Law’s recipe and render it into sourdough:
