Wholemeal, Honey and Buttermilk

Don’t know where this formula came from. Been in my spreadsheets for years so I must have made it before. Had a surplus of buttermilk after making cornbread and found it by the simple expedient of doing a search for “buttermilk” in Excel.

It’s not a true wholemeal – 25% bread flour – and the only liquid is buttermilk. But the comparatively small amounts of of honey and butter blend with the other ingredients to produce a soft and mellow flavour.

    Formula sounds interesting. It was lovely too to see you and Sue today at Aine’s Memorial (albeit in such sad circumstances). Hope you have a good couple of days in Bath.

    I meant what I said about your posts – they are always good value. Your Seeded Spelt Loaf remains on constant repeat here (with a few of my tweaks to justify my existence).
