“Real Bread”

Last week Chris Young (Mr Real Bread Campaign) posted his annual Sourdough September announcement on the Microbakery forum. Not sure what he would have done if there wasn’t a month beginning with “S” but he has been proudly and loudy proclaiming it for about the last ten years as if it was a great achievement.

To me it’s an annual reminder of how little the Real Bread Campaign has achieved in the past 15(?) years.

Anyway, it turned into a bit of a pointless confrontation which you can’t win because he just talks up the campaign’s supposed achievements as if it was a raging success – which it ain’t.

So, to cleanse myself, I went back to to my basics and made a 2 kilo Campagne and felt a lot better.

I always think that 2 kilos is the proper starting point for real bread (and I don’t mean “Real Bread”. The depth of the crumb makes it taste quite different to smaller loaves. That’s the trouble with retirement – it’s a lot of bread to get through …

There’s the formula for your own 2K – needs about 65 minutes baking.

Same thing again next September, Chris?
