My turn to cook on Saturday at the Sporadic Neighbours’ Late Late Lunch Club. Asparagus to start followed by Garlic Lovers’ Italian Sausage deep pan pizza and Steffi, our neighbour of many years, contributed some imaginative salads.
Still finding cooking for one difficult – not talking about the social and emotional aspect which is a whole other subject, but the basic logistics of cooking. Try as I may to down-size, I still buy too much, cook too much, waste too much. Even the small pans are too big for single portions. And food cooks differently in small amounts.
Deep pan pizza is definitely not something bakeable for one person so Steffi was doing me a big favour by agreeing to help me eat it.
Come Sunday and back to solo eating, I still have pizza dough, tomato sauce and asparagus – what could I possibly make with these ingredients?
I know – what about an asparagus pizza (regular, not deep-pan)?
It was the food stylist’s day off again but what you would be able to see if she had been here is, a layer of tomato sauce topped with a scattering of cherry tomato halves and sliced pickled jalapenos, six asparagus spears previously softened in the oven, parmesan shavings and half a left-over burrata. Finally a topping of rocket added a couple of minutes before dishing.
If you’ve got to eat on your own off scraps, I reckon this is the way to do it …
