Challah-gain

What haven’t I baked for a long time? (The familiar cry of the retired baker. It was easier to have variety when there was a potential sixty customers than there is for just the two of us.).

I know, Wholemeal Raisin Challah, the old one I put together years back, not the Babka Zana one from a mere couple of years ago.

Don’t know why the kitchen seems to have got smaller since we stopped baking for sale. I know I’ve got larger but Sue has got smaller so things should have evened out, On top of a congested kitchen, Sue’s cooking an elaborate lunch and needs all the space so I have to get in and out sharpish.

So rather than rollout three or more strands, I decide to go for a single one. It’s quite a firm dough and has to be rolled out with a number of rests to allow it to relax. Which is more that you can say for me.

When I finally get it to the length I want, I remember I’ve forgotten how to tie a figure-of-eight knot. Rather than waste more time digging through several bread books in search of an illustration I opt for a a spiral – very simple and looks good.

(Yes, at the same time I’ve got a kilo of red jalapenos to play with.)

Well, that’s breakfast for at least three mornings – good with cheddar too …
